Food Court Manager
The Food Court Manager is non-union, overtime-exempt, and has oversight of all aspects of the University Center (UC) Food Court and third party vendor contracts in the UC and Rec Center. This position is responsible for performing direct administrative, management, and professional duties relating to planning and directing the operation of the all these operations. The Food Court Manager directly reports to the associate director of Retail Operations and is responsible for the fiscal and personnel management of for employees in the aforementioned operations. The Food Court Manager is responsible for continuously evaluating the business model, and growing current academic and break period business.
The Food Court Manager develops and implements comprehensive, annual operating plans, which includes budget and performance metrics assessment. The responsibilities of this position include assisting in capital planning and in developing renovations and remodels required to develop the business. The Manager is responsible for effective labor and food cost management, equipment purchasing, inventories of supplies and maintenance of equipment, and menu and recipe development. The Food Court Manager will set and maintain high standards for all operational activities under their supervision. The Food Court Manager directs and supervises a chef de cuisine, office manager, cashiers and all front and back-of-house student employees. The positions and number of direct reports vary depending on seasonal business, special events, and activities. The Manager conducts performance reviews and performance management and provides training and professional development opportunities for all Food Court employees, including students. The Manager is the leader for all aspects of personnel management of students and full-time employees including recruitment, scheduling, and performance management.
This position develops and maintains positive, professional relationships with the Office of the President, The University Center, and all guests at the Food Court and coffee operations. This position contributes to the overall success of the ShipEx by performing all other duties and responsibilities as assigned.
This position will assist with planning, development, and implementation of new menu concepts. As part of the UCD Management Team, the Food Court Manager will contribute to the implementation of the UCD Strategic and Marketing Plans and assist with the development of relevant policies and procedures.
During break periods or as determined by the director, this position may be assigned other operating units within Camps Dining.
Required Skills
Knowledge of food production and service techniques that produce and present excellent food for a diverse group of guests.
Experience with effectively training all employees at all work stations under the assigned area of responsibility.
ServSafe certification, or the ability to obtain certification within four months of hire.
Experience managing a budget with responsibility for food and labor cost management.
Experience with recipe and menu development and production of high-quality food, menus, and dining experiences.
Experience with food, supply, and capital purchasing.
Experience with receiving, storage, foodservice equipment and equipment maintenance, inventory, budgets, and analysis of foodservice operations.
The successful candidate is required to have or be able to obtain a valid Montana driver’s license within one month of employment.
Working knowledge and experience with the Microsoft Office Suite, Excel spread sheets, and extensive knowledge of point of sale systems (POS).
Minimum Required Experience
High School diploma and two (2) years of experience or an equivalent combination of education and experience.
Professional food management and supervisory experience in a food court environment.
Preferred Qualifications
Four (4) year degree in hospitality or foodservice management or a related field, plus a minimum of four (4) years of directly related experience, OR a two (2) year degree from an accredited culinary program, with six (6) years of related food service management experience. Three (3) of those years must be in an operation which has a high service volume (1000 meals per day).
Experience working with college students as employees and guests.
