invites applications for a

Culinary Services Manager II

to oversee Monte’s Den and the Iron Griz. This position reports directly to the Associate Director of Retail Dining. This position is responsible for directing and supervising all front and back-of-house employees including approximately 20 student employees. The positions and number of direct reports will vary depending on seasonal business, special events, and both University Center and Golf Course activities. The manager will also conduct performance reviews and performance management and provide training and professional development opportunities for all employees, including students.

Some responsibilities for this position include, but aren’t limited to:

Operational oversight of both the Monte’s Den and the Iron Griz locations, including dining rooms kitchens, and the Iron Griz patio.

Setting and maintaining high standards for all operational activities under their supervision.

Performing direct administration, management, and professional duties relating to planning and directing the operations of Monte’s Den and Iron Griz.

Fiscal management of the Monte’s Den and the Iron Griz including labor cost management, food cost management, purchasing, equipment and supply costs, and inventory management.

Continuously evaluating the business model, growing the current summer business, and developing new fall, winter, and spring business.

Effectively managing an operation that serves alcohol to both the public and university guests.

Assisting in developing capital plans, renovations, and remodels required to develop the business.

Menu, recipe, and special event development.

All aspects of personnel management of students and full-time employees including recruitment, scheduling, and performance management.

Developing and maintaining positive, professional relationships with Campus Recreation, UM Golf Course staff, the University Center and all guests of both operations.

Contributing to the implementation of the UMD Strategic and Marketing Plans.

Assisting with the development of relevant policies and procedures.

This position requires incumbent to have or develop knowledge, skills, and abilities that include:

The ability to develop and implement strategic, short-term and long-range goals and objectives.

Expert knowledge of event planning.

Extensive knowledge of the CBORD Food Management System including ordering and inventory management.

Expert knowledge of menu engineering and menu development in limited-service casual dining restaurants and special event planning.

Expert knowledge of inventory controls, food and labor expense management, budget and financial analysis, and revenue generation.

Active participation in appropriate professional organizations such as NACUFS, ACF, etc.

Ability to develop an annual operating plan which includes repair and renovation projects and capital equipment requests.

The ability to develop and implement policies, procedures, methods, and techniques to ensure all clubhouse staff comply with department objectives, quality and safety standards, and health regulations.

The ability to continuously explore new menu ideas and provide Iron Griz guests with an exceptional dining experience.

Expert knowledge of all Campus Dining policies and procedures.

Ability to collaborate with the Campus Dining Marketing Department to appropriately market Iron Griz.

Expert knowledge of employee performance planning and the ability to effectively conduct annual performance reviews.

Required Skills:

Professional food management and supervisory experience.

Knowledge of food production techniques that produce excellent food for a diverse group of guests.

Experience effectively training all employees at all work stations under the assigned area of responsibility.

Knowledge of all current state and county laws governing the sale of alcohol and experience with food service operations that serve alcohol.

Experience managing a budget with responsibility for food and labor cost management.

Experience with recipe and menu development and production of high-quality food, menus, and dining experiences.

Experience with planning, marketing, implementing, and assessment of special events.

Experience with food, supply, and capital purchasing.

Experience with receiving, storage, food service equipment and equipment maintenance, inventory, budgets, and analysis of food service operations.

Experience working in or for an operation that has served alcohol to the public.

Working knowledge and experience with the Microsoft Office Suite, Excel spreadsheets, food management systems like CBORD, and extensive knowledge of point-of-sale systems (POS).

Minimum Required Experience and Training

Hospitality or food service management degree and at least four (4) years directly related experience or an equivalent combination of education and experience.

ServSafe certification, or the ability to obtain certification within four (4) months of hire.

TIPS training, or the ability to become trained within two (2) weeks of hire.

Preferred Qualifications:

Experience working with college students as employees and guests.
